Here comes the recipe as promised.
One of my favourite soups. Easy to make, filling and delicious.

Tomato & Red lentil soup
1 onion
1 garlic clove
1 large carrot
2-3 tomatoes
2 cans crushed tomatoes
2/3 cup red lentils
2 cups water
1 tbsp balsamico
1 cub veg bouillon (optional)
Black pepper to taste
Handful of chopped fresh herbs

Chop the onion, garlic and tomatoes. Grate the carrot. Heat a large pot on medium heat. Add a drop of oil and fry the onion and garlic. When soft and slightly golden, add the tomatoes, carrot, crushed tomatoes, lentils, bouillon, balsamico and water. Season with black pepper. Bring to a boil and then turn down the heat on low. Let simmer until lentils are all cooked through and soft. (20-25 minutes) Add your fresh herbs and let simmer for another 5 minutes. Decorate with water cress and serve with crisp bread topped with butter bean hummus. Enjoy! ❤️
