I found out about sweet potatoes just a couple of years ago and HOW I love them. Oven baked, in stews, grilled. They are so versatile and nutritious. Today I used both the “regular” orange potato, but also a purple one that I found in the store yesterday. They are very similar apart from that the purple one is firmer when cooked and makes crispier fries.

The Fries
serves 2

2 Sweet potatoes – peeled and cut into fries
1 tbsp maple syrup
1 bsp coconut oil (optional!!)
1 tsp paprika
1 tsp cumin
Pinch of cracked black pepper

Put the fries in a bowl and add the syrup, oil and spices. Toss until evenly coated.
Put them on a tray lined with baking sheet, spreading them out.
Cook at 250 degrees C until slightly brown, turn them once.

Avocado & Basil Sauce

2 ripe avocados
1 clove garlic
1/2 lime – only the juice
2 handfuls fresh basil
salt and pepper

Mix in blender until all smooth.
